American Mussel Soup (Microwave)
Today’s recipe, American Mussel Soup, is a perfect dish to serve when you want to impress your friends and family. The soup is full of flavor and rich in vitamin B12. Fits perfectly as a delicious appetizer, or as a full meal served with toast.
This is what you need
4 medium size potatoes
1 – 2 onions
2 – 3 thick slices of bacon
3,5 cups of fish-stock/broth (water + cube)
3 cups (8 oz, 0,5 lb) of canned, cleaned mussels (save the liquid)
0,4 cup of heavy cream
A pinch of pepper
salt (optional, the bacon might make it salty enough)

This is what you do
Peel potatoes and onions. Cut potatoes, onions and bacon into small uniform cubes.
Place the cubes in a micro safe bowl.
Cover the bowl and cook the mixture on full power for 5 – 6 minutes. Add the fish broth and the liquid from the can. Cover the bowl again, and boil on full power for 10-12 minutes.
Add the heavy cream, salt and pepper, and the mussels last.
IMPORTANT: Do NOT boil the soup after the mussels are added.
