American potato-stew for microwave

The recipe I am sharing with you today is one of my all-time favorites

I just love potatoes in any variation

Alone as a snack, or as a side to fish, meat or vegetable-dishes.

I always try to come up with new ways to serve my potatoes,

and I think you will be very pleased with today’s recipe.

Just follow the instruction step by step and you are in for a real treat. ENJOY

American Potato Stew with potato chips and cheese

 

This is what you need

 

serves 2  

1 serving is 360 cal.

 

4 medium sized BOILED potatoes 

1 onion 

1 cup (1 ½ dl) sour cream or crème fraîche 

2/3 cup (1 dl) Cottage Cheese 

1/3 cup (½ dl) shredded cheese 

8-10 potato-chips with dill or onion 

salt and pepper to taste 

How to make American Potato Stew from scratch in your microwave

 

 


Handy in the kitchen



This is what you do

 

Cut the potatoes in small squares (see photo)

Peel and finely chop the onion

Mix the potatoes and onion with the sour cream and Cottage Cheese

Add salt and pepper to taste and place it all in a micro-safe bowl

Sprinkle with grated cheese and top off with the potato-chips

Cover your bowl and cook on full effect for about 5-7 minutes

 

 

Notes; always leave your dish for a few minutes to let the heat spread evenly before serving

You might want to sprinkle paprika-powder on top to give your dish a little bit of color, but that is optional

 

 

This American potato-stew can be a dish on it’s own, but it is perfect to serve with cured ham, smoked sausage or salmon

        This is a quick easy favourite and on our menu once a week: Wholemeal tortillas Chopped Lettuce Chopped Tomato Light sour cream Low salt baked beans Burrito spice optional:Grated Carrots Grated Low fat cheddar Chopped onion Jalapeno chillies Heat beans in microwave and mash up until the sauce has thickened. Throw in the burrito spice. Heat the tortillas and serve for people to make their own burritos. Easy and yum. Normal person I’d say would eat 2-3 burritos at a time. If I have extra I make them and put in fridge for work the next day.
