Banana Cake with Coconut


This Banana Cake is easily made in your microwave in less than 20 minutes. Perfect when a neighbour pop over for a cup of coffee or you just feel the urge for a snack.

Banana Cake with Coconut, made in your microwave in less than 20 minutes

This is what you need

Makes 10-12 squares

1 square is about 170 cal.


2 bananas

100 gr (7 tbsp) butter or margarine

2 eggs

1 dl (6-7 tbsp) brown sugar

1 1/2 dl (10 tbsp) flour

3/4 dl (5 tbsp) semolina groats

1 ts baking powder

1 1/2 dl (10 tbsp) grated coconut

How to make Banana Cake with Coconut in your microwave, step by step

This is what you do

  1. Prick the bananas with a toothpick and warm them in your microwave on full power for about 2 minutes. Let them cool off for a few minutes, then peel them and cut them into slices.

  2. Melt the butter in a microwave safe bowl, full power for 1-2 minutes.

  3. Beat the eggs with the sugar, blend the flour, semolina groats, baking powder and the grated coconut together, then combine the dry ingredients with the eggs. Add the banana-slices at the end, mash them if you want, but that is not necessary.

  4. Pour the batter into a greased (use the melted butter) microwave safe oval bowl. Bake the cake in two steps. First, half power for 8 minutes, and then on full power for about 4 minutes. Leave it to cool off a bit before you cut it into squares and enjoy your Banan Cake with a nice cup of coffee or tea.

Note: As a variation, add 1 tsp of cinnamon or any other favorite spice of yours .
