Lemon Fish in Vegetable Salsa (Microwave)

Fish and Microwaves are a match made in haven. In 1987 I read an article in the Chicago Tribune with the headline “Fish Cooked In Microwave Oven Takes Top Honors For Tender Juiciness”.

They did a blind tasting test and all the tasters picked the fish from the microwave oven as more juicy and tender than fish cooked any other way.

Since then I have prepared all my fish-dishes in the microwave and they turn out perfect every time.

Lemon-Fish in Vegetable Salsa for Microwave

This is what you need

serves 4

 

800g (28 oz.) frozen cod fillets

½ cup of flour

For the marinade

Juice from 2-3 lemons

2 crushed garlic cloves

1 bay leaf

1 tsp salt

2 tbsp chopped parsley

For the vegetable mix

1 tbsp oil

1 green bell pepper

1 red bell pepper

1 squash (250g – 9 oz)

2 onions

3 tomatoes

1 tsp chervil

2 bay leaves

A pinch of cayenne pepper

½ tsp thyme

2 crushed garlic cloves

1 tiny pinch of saffron

1 tbsp tomato puree

This is what you do

  1. Defrost the fish on low power/defrost for about 8-10 minutes. Just enough for the blocks to be divided if they are frozen together. Place the fish in a bowl. Mix the ingredients for the marinade and pour it over your fish. Set aside for about 1 hour.

  2. Clean your vegetables, and cut them in small pieces.Pour oil in a micro safe dish, add the veggies, spieces and tomato puree. Cover and cook on full power for 8-10 minutes. Stir once when half done.

  3. Remove the fish from the marinade, dry them off a bit and coat them with flour. Place the fish in with the vegetables. Push the veggies aside a bit to make room and then cover the fish with the vegetables.

  4. Pour the marinade over the dish and cover again. Finish cooking your lemon-fish on full power for 10-12 minutes. Serve with rice.
