Lovely Lunch Casserole for Microwave


I really love a warm lunch on a cold winter day.

The recipe I am sharing with you today is rich in iron and fiber and is ready to serve in 10 – 12 minutes.

It doesn’t get much easier than that! ENJOY

Sausage and onion lunch casserole made in the microwave

This is what you need

serves 2- 3

1 serving is about 340 cal.

1 big onion

½ tbsp butter or margarine or cooking-spray

1 can of corn (about 350g / 12 oz)

10 tbsp of frozen green peas

½ tsp salt

½ – 1 tsp curry-powder

3 ½ tbsp of water

2 smoked sausages of your choise ( 300 g/ 10-11 oz)

Handy in the kitchen

This is what you do

  1. Peel the onion and slice it into thin “boats” ( see photo)

  2. Butter the bottom of a microsafe bowl or use cooking spray and place the onion inside.

  3. Add the corn (do not use the liquid from the can! )

  4. Add the frozen peas, salt, curry and the water.

  5. Cover the bowl and cook on full effect for 4-5 minutes.

  6. Cut the sausage in thick slices and mix them in with the vegetables.

  7. Cover the bowl again and cook on full effect for 2-3 minutes, making sure the sausages are warm all the way through.

Notes; Sprinkle parsley on top before serving, it looks good and tastes great.  Eat as lunch with dark bread, or as dinner with boiled potatoes.

Always leave your microwave dish for about 5 minutes before serving to let the heat spread out evenly.
