Microwave Fish Roll-Ups in Mustard Sauce
These fish rolls are quick and easy to make. I am not a big fan of fish so I am always trying to find new ways to prepare them, and this recipe is one of my favorites. If you like mustard sauce, onions and herbs, this is the dish for you. You can vary the sauce with curry or garlic instead of mustard, and you have a totally different taste. The options are many, be creative and try something new each time and use this recipe as a base
This is what you need
6 fish fillets, I used sole, but you can use any fish
1 small onion
1 tbsp butter or margarine
3 tbsp light mustard
1 tsp herb salt
3 tbsp whole milk
13 and a ½ tbsp (small cup) sour cream
½ tsp salt
A few green leaves for garnish (optional)

This is what you do
Rinse the fish fillets under cold running water and dry them with paper towels. Peel and finely chop the onion. Place the chopped onion and the butter in a microwave safe dish. Cover and cook on full power for 4-5 minutes.
Take the dish out of the microwave and add mustard, herb salt, milk and sour cream.
Sprinkle salt on the fish fillets and roll them up. Place them in the dish and cover it again.
Cook on full power for 5-6 minutes. Let the dish rest a few minutes to even out the heat.
Garnish with green leaves to add colour to your dish.
Serve with boiled or mashed potatoes and boiled vegetables. On the image I used boiled shredded potatoes.
