Microwave Quicklunch, frozen vegetable-mix, leftover meat from last night’s dinner, or any cooked meat or sausage you have laying around. Some eggs and milk, herbs and spices and you have the best lunch ever. And all done in 15 minutes.

Quick Lunch for Microwave

This is what you need

serves 2

1 serving is 340 cal.

2 cups frozen vegetable mix, your favorite

4 thick slices of any cooked meat. (I used smoked pork loin)

2 eggs

½ cup of milk

add any herbs you like (I use scallions)

salt and pepper

chopped parsley for garnish

How to make a Quick Lunch in the microwave

This is what you do

  1. Pour the vegetables into two micro safe bowls. Cover and cook on full power for 3-4 minutes

  2. Take the bowls out of the Microwave and add the meat, any pre-cooked meat.

  3. Whisk the egg and milk together, add salt, pepper and any herbs you prefer. Pour the egg mix over the vegetables/meat.

  4. Cover the bowls and cook the dish on full power for 7-9 minutes. Leave them for a few minutes to let the heat even out and add chopped parsley and top before serving.

You can make a lot of variations of this dish. Different vegetable-mixes, different meat or different herbs. Just be creative. This is a great way to use up your leftovers.
