mushroom temptation for microwave
My microwave is my best friend during the holidays.
To save time this year I got all my presents sorted out by sending giftbaskets to all my loved ones

Another way to avoid stress during the holidays is to let your microwave do most of the work for you.
This is the time for unexpected guests and small and big parties, so today I will share a recipe with you that might make life a little bit easier.ENJOY
This is what you need
serves 2-3 persons
1 serving is 260 cal
4-6 medium sized potatoes
10 tbsp finely chopped leek
1 can (7 oz) champignon or chanterelle
1/3 cup of cream
1/2 tsp salt
a pinch of pepper
parsley to garnish
Handy in the kitchen
This is what you do
1 Peel the potatoes and onion and chop it, not too fine, use a foodprocessor or a grater if you have.
2 Pour the liquid off the mushrooms and layer them in a microsafe bowl with the potatoes, onion and leek
3 Mix the salt and pepper with the cream and pour it over your dish
4 Cover the bowl and cook it on full effect for 10-13 minutes
Garnish with parsley
note: This is a skinny dish. It adds vitamin C, iron and fiber to your diet.
Great as appetizer or side to porkchops or steak.
