Open Omelet with Bacon (Microwave)


Omelet is my favorite breakfast. Today’s recipe is just one out of many that I enjoy making in the morning. The main reason I like this one is because of the bacon. I just love bacon….. The peas and pimientos give a lot of extra taste and give me a great start of my day. Most days I prefer to eat a solid breakfast and later go for a lighter lunch.

Delicious Omelet with Bacon, Peas and Pimientos made in your microwave.. Make a lovely breakfast in just 10 minutes

This is what you need

serves 2

1 serving is 365 cal.

5 slices of bacon

4 eggs

6 tbsp water

1 tbsp flour

1 cup canned, diced pimientos

1 cup canned peas

1 tbsp finely chopped parsley

a pinch of salt

Breakfast-omelet with bacon, pimientos and peas. Make it in your microwave in 10 minutes

Handy in the kitchen

This is what you do

  1. Cut each bacon-slice in 2 or 3 pieces and place them in a micro safe bowl. Microwave the bacon on full power for 2 minutes

  2. Whisk the egg lightly together with the water, flour and salt. Pour the mixture over the bacon

  3. Microwave the omelet on full power for 3 minutes.

  4. Place the peas on top of the omelet on one side, and the pimientos on the other side. Microwave the dish on full power for 1-2 minutes, until the vegetables are warm. Sprinkle the parsley on top and serve while warm.

This omelet is a little fatty, thanks to the bacon, but is rich in vitamin A and C.

If you want to use fresh peppers instead of pimientos, microwave them with a little bit of water on full power for a few minutes before adding them to your dish
