Peanut Cookies for microwave
These peanut cookies is a life saver when you get unexpected guests. They only take a few minutes to make, so when the coffee is ready you have some delicious, still warm, peanut cookies to serve with it. Of course, you can quickly cook up a batch for yourself when the cravings set in. (And that happens often to me). We use a lot of peanuts in the Mediterranean diet, not only because it tastes good, but also because of the huge amount of health benefits it gives you. So what are we waiting for? Let’s get started.
This is what you need
1 cookie is about 90 cal.
225 gr (7.93 oz) butter or margarine
1 ½ dl (4,2 oz) sugar
½ dl (1,4 oz) brown sugar
1 – 1 ½ dl (2,8 – 4,2 oz) roasted peanuts
5 dl (14,3 oz) wheat flour
1 egg yolk
2 tsp vanilla sugar

This is what you do
Combine the butter, sugar and brown sugar and stir it all together. When it becomes an airy mass it’s time to add the egg yolk and mix well.
Chop up the peanuts (not too fine). Combine the peanuts with the vanilla sugar and the flour and mix it all in with the butter. Stir it all together until you have a good cookie dough.
Shape your dough into a long sausage and cut it into 40 smaller pieces. Form each one into a ball and press them flat with your fingers. Place them on baking paper, 9 cookies on each sheet.
Bake the cookies, 9 at the time, on full effect for about 1 ½ – 2 minutes. Take them out of the microwave and leave them on the baking paper for a few minutes to let the heat spread evenly before you move them to a rack to cool down a little bit. We don’t want to burn our fingers.
Notes; Use this recipe as a basic for cookies made with other nuts. Just switch the peanuts for any other nuts you prefer and bake them the same way.
