Quick and Easy Cauliflower Soup for Microwave
Today I am sharing my Cauliflower Soup recipe with you and hope you like it as much as I do.
Nothing tastes better on a cold winter day than a nice cup of soup, if you ask me.
This cauliflower soup have only 5 ingredients and 10-11 minutes of cooking time,
so it’s quickly made and ready to eat in no time.
It is also very rich in vitamin C, something we all need during the cold season.

This is what you need
1 serving is 180 cal.
250 gr. (8,8 oz) cauliflower
½ dl (3,4 tbsp) water for boiling the cauliflower
3 dl. (1,3 cups) water
1 cube vegetable broth
1 egg yolk
½ dl (3,4 tbsp) heavy cream

This is what you do
Wash the cauliflower and cut into small florets
Place the florets in a micro-safe bowl, add the water (just ½ dl) cover with lid and cook for 5-6 minutes on full effect.
Mash the cauliflower in a food processor or through a sieve into a fine paste. Pour it back in the micro-safe bowl add the rest of the water (3 dl) and the vegetable broth.
Boil the soup on full effect for about 5 minutes. Stir the egg yolk and the heavy cream together and add it to the soup slowly while stirring. Do not warm the soup after adding the egg and cream mixture. Eat and enjoy.
Notes: Select a bowl with high sides so the soup does not boil over. Never leave it in the microwave unattended.
Serve this cauliflower soup with a light sprinkle of crumbled, crispy bacon on top and slices of toast on the side
