Smoked Onion Sausage (Microwave)
Sausage might not be the most exciting food you can serve, but there are many ways to dish it up. Today’s recipe shows one way to do it, but I am sure you can come up with your own mix of ingredients to fill your favorite sausage. For this recipe I used Swedish Falukorv, but if you can’t get that in your local store, use any large smoked sausage, and take the skin of before you place it in the microwave. This dish is a little bit on the fatty side, but it containes some iron and vitamin C.
This is what you need
1 serving is 720 cal.
300 gram (10,6 oz or 0,66 lb) Swedish falukorv
or an other large smoked sausage, skin off
1 small onion
1-2 garlic cloves
3,5 tbsp finely chopped parsley
1 and ¾ tbsp (25 gram) softened butter
salt and pepper to taste
1 can (2 cups) baked beans in tomato sauce

This is what you do
Pull the skin off the sausage. Cut a deep incision along the middle.
Peel and finely chop the onion and the garlic. Mix onions and parsley with softened butter. Season with salt and pepper.
Squeeze the filling into the incision in the sausage.
Place the sausage in a micro safe dish. Cover and cook for about 5-7 minutes on full power. Remove from microwave oven and pour the tomato beans around the sausage. Warm up for about 2-3 minutes on full power.
Serve warm with fresh bread or a nice salad.
