Strawberry Meringue Dessert (Microwave)
Strawberries and raspberries
are the main ingredients in this recipe. You can use fresh or frozen berries. You can also use others, like blueberries, or whatever kind you have available. This dessert is easy and quick to make, and the fresh taste of berries is a delicious way to end any meal.
This is what you need
2 small cups frozen strawberries
1 ½ cup frozen raspberries
(use a little bit more if you use fresh berries)
4 egg whites
7 tbsp powdered sugar

This is what you do
Defrost the frozen berries in the microwave for 3-4 minutes and then mash them together in a food processor or by hand. Place the mashed berries in a low and wide micro safe dish
Beat the egg whites until foamy, then gradually add the powdered sugar and keep beating until stiff peaks forms.
Place the meringue mixture in six big “balls” on top of the mashed berries.
Warm the dessert on full power for 3-4 minutes until the meringue-tops are stiff and the berries are warm. Serve right away.
Note: Use the shortest cooking-time if you use fresh berries.
