Stuffed Champignons for Microwave


I just love mushrooms.  Stuffed or not, they are full of healthy nutrition and low in calories.

They give you in a 100 g (3,5 ounce) serving more than 20% of your daily needed dose of vitamin B.

The recipe I am sharing with you today is one of my favorites. Just 10 minutes to prepare and 5 minutes to cook.

Feel free to experiment with the stuffing and make your own mix with your prefered ingredients. ENJOY

Stuffed champignons made in your microwave


This is what you need

serves 3

one serving is about 120 cal.



250 gr. (9 oz) big fresh mushrooms

6-8 walnut kernels

1/3 cup finely chopped leek

1/2 cup grated strong cheese of your choise

1/2 tsp tarragon

Handy in the kitchen


This is what you do


1. Rinse the mushrooms and “shake” them dry in a towel, cut of and finely chop the stems , make a cut in the mushroom where the stem was attached

2. Cut a cross on the top of the mushroom-hats and place them in a microsafe bowl

3.Crush the walnut kernels and mix them with the chopped stems, the leek , the cheese and the tarragon. Fill the cross in the mushroomhats with the mixture

4. Cook the dish on full effect for 4-5 minutes.

note; You can use sliced mushrooms from a can, get rid of all the liquid,

cover the bottom of your bowl with them

and sprinkle the rest of the ingredients on top


Looks nice with a sprinkle of parsley on top and tastes great with bread or as a side or appetizer
