The recipe I am sharing with you today, stuffed tomato roses, is one of my most popular side-dishes. They look amazing and are very quick and easy to make. These filled tomatoes go well with all kinds of meat and are also a great side to smoked fish. Or eat them as a snack with some nice bread. Tomato Roses stuffed with egg, asparagus and cheese (microwave)

This is what you need


serves 2

1 serving is 150 cal.


2 big firm tomatoes, i.e. beef tomatoes

2 tbsp finely chopped asparagus

2 eggs

2 tbsp shredded cheese

salt and pepper

How to make stuffed Tomato Roses, step by step


Handy in the kitchen



This is what you do

  1. Remove the top of the tomatoes and scoop out the seeds and pulp with a spoon.

  2. Place the tomatoes on a micro safe plate or two small individual micro safe bowls. Sprinkle a little salt inside the tomatoes and add the asparagus.

  3. Crack one egg into each tomato. Use a toothpick to make a hole in the yolk. Sprinkle the cheese on top and spice with a little bit of pepper.

  4. Cover the plate and microwave the “roses” on full power for 2-3 minutes. Make sure the cheese is melted.

If you have any leftover crispy bacon lying around you can chop it up and add that in the bottom instead of the salt.

Serve warm as a snack or as a side to any meat or smoked fish.
